Located in the Arion wing, Pelagos features a timber panelled ceiling, which mimes the shape of a boat's hull and a marble patterned floor inspired by traditional boat sails. The hotel's strong affinity with the region's maritime heritage is reflected in the restaurant's menu, which specialises in sophisticated seafood fare.

Located in the Nafsika wing, Mercato features a warm colour palette of azure-blue and ochre with marble working together with leather and brass. Banquette seating and larger tables provide opportunities for parties to dine in a communal fashion, whilst guests in small groups can dine in a more intimate setting. The restaurant opens out onto a nautical-themed terrace area, where guests can take in the breath-taking views of the Riviera all whilst sitting back in comfort on upholstered armchairs and sofas.
